Mesopotamian Date Preserve with Cloves & Orange Peel

  • 2 pounds fresh, firm dates
  • 4 cups water

Method

  1. Remove the dates from the stalks, cut in half and pit.
  2. In a medium non-reactive pot, bring the water and sugar to a boil over medium heat. Simmer for 10 minutes, until the sugar has dissolved completely.
  3. Add the lime juice, cinnamon stick, cloves, orange rind, almonds and dates. Bring back to a boil. Reduce heat and simmer over medium heat for 45 minu
