In a medium non-reactive pot, bring the water and sugar to a boil over medium heat. Simmer for 10 minutes, until the sugar has dissolved completely.
Add the lime juice, cinnamon and jujubes. Bring back to a boil. Reduce heat and simmer over medium heat for 45 minutes, or until syrup has thickened and sticks to the back of a spoon. Remove from heat.
