I’ve updated a childhood favourite here by poaching pears in vanilla; it’s a little step up from the canned pears I used to enjoy when I was younger. I still occasionally indulge and crack open a can, but when I’ve got the time I use fresh pears.

Ingredients

  • 250 ml clear apple juice
  • 125 ml water
  • 1 vanilla pod

Method

  1. Combine the apple juice, water, vanilla pod and sugar in a deep saucepan and stir over low heat to dissolve the sugar.
  2. Bring to a simmer and add the pears.
  3. Cover with a cartouche* and leave to gently cook for 15–20 minutes until the pears are tender.
  4. Remove the pears from the syrup with a slotted spoon
