  • About

Other than the queen cakes, banana bread was the only other sweet baked item that my mother made really well. I used to love it as a child, but as I grew older I developed a serious dislike for bananas. This is what I now make in place of Mom’s banana bread.

Ingredients

  • 200 g castor sugar
  • 60 g butter, softened
  • 280 g</

Method

  1. Preheat the oven to 180 °C and grease a standard loaf tin.
  2. Cream the sugar and butter in a large bowl until pale and fluffy.
  3. Sift the flour, baking powder and salt into a separate bowl.
  4. In another bowl, whisk the eggs, milk and vani
