I don’t know anyone who wasn’t excited the first time they learnt how to make honeycomb. Watching the sugar expand and grow as you stir in the bicarb is still thrilling, no matter how many times you’ve done it before.

Ingredients

For the honeycomb

  • 100 g castor sugar
  • 60 ml golden syrup
  • 5

Method

  1. To make the honeycomb, line a baking tray with baking paper or greased foil.
  2. Place the sugar and syrup in a saucepan and stir to mix. Do not stir it again, but allow it to gently melt over low heat.
  3. Once dissolved, bring it to a simmer for about 3 minutes or until it turns the colour of maple syrup, then remove from the heat, whisk in the bicarbonate
