There’s no way I can reminisce about my school days without featuring a fridge tart. This is my favourite flavour.

Ingredients

  • 200 g coconut biscuits, crushed
  • 100 g butter, melted
  • 40

Method

  1. Mix the crushed biscuits and butter, press into a 23-cm tart tin and refrigerate.
  2. Dissolve the jelly powder in the boiling water and set aside to cool.
  3. Combine the cream cheese and condensed milk in a bowl and then add the cooled jelly.
  4. Pour the mixture into the chilled tart base and allow to set in the fridge.
