Crème pâtissière (pastry cream) is the one recipe I learnt in school that I now use more than any other. It forms the base for one of my favourite desserts: the custard slice.

Ingredients

  • 1 litre milk
  • 6 large egg yolks
  • 160 g castor sugar</

Method

  1. Heat the milk in a saucepan until just before boiling and then remove from the heat.
  2. Whisk in the egg yolks, castor sugar and cornflour.
  3. Return the pan to a low heat and cook, stirring continuously, until the mixture has thickened.
