I adore the combination of sweet caramelised red onion and tangy goat’s milk cheese. We used to make individual versions of this tart at the brasserie to serve as a starter; my version is a family-sized tart – it’s the way I like to serve it at home.

Ingredients

For the caramelised onion

  • 30 ml olive oil
  • 6 red onions, sliced
  • 30 ml

Method

  1. First make the caramelised onion. Heat the oil in a frying pan and gently sauté the onions and thyme until the onions are soft and beginning to caramelise.
  2. Add the sugar and balsamic vinegar, reduce the heat and leave to simmer until the liquid has evaporated and the onions are a dark colour.
