The perfect batter can make or break a great fish and chips dinner, so when I finally learnt how to make this beer batter, I felt as though I’d accomplished something significant. In the UK we used cod and at home I use hake, but you can use any firm fish you like.

Ingredients

  • 100 g cake flour
  • 55 g cornflour
  • 5 ml <

Method

  1. Combine the flour, cornflour, baking powder and salt in a bowl.
  2. Whisk in enough beer to form a thick batter.
  3. Pat dry the fish fillets and then dip them into the batter to coat.
  4. Heat sunflower oil to 160 °C in a deep-fat fryer or use a saucepan and a thermometer to monitor the oil temperature.
