I indulged in my share of pub grub while in the UK, and there was nothing more comforting than a Sunday roast or bangers and mash. You’d think the best bangers and mash I’ve had would have been cooked by an Englishman, but not so. Reuben Boya wins hands down every time. His caramelised onion gravy is what gives his bangers and mash the edge and I’ve been asking him to share his recipe with me for years. Finally, he agreed.
