Name: Chris’s Almond-Roasted Cauliflower, Baby Swedes and Watermelon BBQ Sauce
Yield: Serves 4
Ingredients: 30 ml smoked olive oil; 2 ml smoked Spanish paprika; 200 ml watermelon juice; 3 baby porcini mushrooms, halved; 5 ml Maldon salt; 50 g butter; 100 ml cream; 50 ml olive oil; 1.5 kg baby Swedes or golden beets; a pinch of salt; fresh micro-greens for decorating; 10 g flaked almonds, lightly toasted; 400 ml sunflower oil; 2 large heads cauliflower; salt and freshly ground black pepper to taste; 250 g picked Italian flat-leaf parsley, stalks removed

Chris Erasmus is one of the chefs I respect most. I worked under him as a trainee chef during my studies when I was placed at one of the top restaurants in the country, Le Quartier Français.
