Chris Erasmus is one of the chefs I respect most. I worked under him as a trainee chef during my studies when I was placed at one of the top restaurants in the country, Le Quartier Français. I can honestly say that he has single-handedly taught me more than any other one individual – everything from how to sous vide, cure meats, cook game and make flavoured oils.
