Ingredients: olive oil; 300 g brown mushrooms, finely chopped; 2 × 400-g rolls readymade all-butter puff pastry; 6 slices Parma ham; 1 onion, finely chopped; 1 large egg, beaten; 30 ml chopped fresh thyme leaves; cake flour for dusting; salt and freshly ground black pepper to taste; 45 ml Dijon mustard; 600 g beef fillet

This is one of those impressive dinner-party dishes that I whip up when I’m feeling a little fancy. I hardly ever make my own puff pastry – it’s a long and tedious process. Instead I buy a good-quality all-butter puff pastry, and the proof is in the flavour. I serve my Wellington medium-rare, but if you like it more well done, just cook it for longer.
