This is one of those impressive dinner-party dishes that I whip up when I’m feeling a little fancy. I hardly ever make my own puff pastry – it’s a long and tedious process. Instead I buy a good-quality all-butter puff pastry, and the proof is in the flavour. I serve my Wellington medium-rare, but if you like it more well done, just cook it for longer.
