The key to a perfect pavlova meringue is a crisp crunchy outside and a sticky marshmallow inside. This is my pimped-up version of the classic pavlova. I enjoy the sharpness that the passion fruit brings to this often very sweet dessert.

Ingredients

  • 4 large egg whites, at room temperature
  • 210 g brown sugar
  • 5 ml

  1. Preheat the oven to 150 °C. Line two baking trays with baking paper and draw a circle the size of a side plate on each.
