During my culinary-school days, chocolate fondant was in its heyday. It was even part of my final practical exam. That’s how I’ve come to master a recipe that never fails. This will give you the perfect, gooey fondant every time.

Ingredients

  • 100 g dark chocolate, chopped
  • 100 g butter
  • 3 large

Method

  1. Gently melt the chocolate and butter in a bowl set over a saucepan of simmering water.
  2. Whip the eggs and sugar in a large bowl until tripled in volume.
  3. Sift the flour, cocoa powder and salt into a separate bowl.
  4. Fold the melted chocolate and dry ingredients into the egg mixture, alternating a little at a time.
