I’m not what you’d call a salad type of girl and it’s definitely not something I’d generally order off a menu, but I do have days where I want to eat something that feels light but still excites me when I eat it and is filling.

Ingredients

For the dressing

  • 1 large egg yolk
  • 1 small clove garlic, crushed
  • 2 anchovy fillets

Method

  1. To make the dressing, blend the egg yolk, garlic, anchovies, cheese and seasoning in a blender. With the motor running, drizzle in the oil in a stream until the dressing is emulsified.
