This is my signature cake. It is the most decadent. When I want to spoil someone (or myself), this is what I bake.

Ingredients

For the dark chocolate sponge

  • 380 g Demerara sugar
  • 500 ml boiling water
  • 240

Method

  1. To make the cake, place the sugar and boiling water in a large bowl and stir until the sugar has dissolved.
  2. Pour in the oil, add the dark chocolate and stir until the chocolate has completely melted and the mixture is smooth. Stir in the lightly whisked eggs.
