This is a puffed bread served all over India to accompany curries and is great for mopping up sauce. The version I sampled in India was made using wholewheat flour; my version is made using white bread flour, which I find produces a slightly flakier puri.

Ingredients

  • 200 g white bread flour
  • a pinch of salt
  • about 300 ml

Method

  1. Place the flour into a bowl and stir in the salt.
  2. Add enough water to form a soft dough.
  3. Add the oil and knead for 2 minutes.
  4. Pinch off pieces of the dough and form into balls.
  5. Roll out the dough balls into 0.5-cm thick flat disks on a floured surface.
  6. Heat sunflower oil in a frying pan and drop a disk into the hot oil. P
