I had fish wrapped in banana leaves for the first time on a house boat in India; it was one of the most fabulous cooking experiences I’ve ever been a part of. My version is slightly different to the one I had there. If I can’t find banana leaves, I just make it in foil parcels – it still tastes great.

Ingredients

  • 1 onion, grated
  • juice of 2 lemons
  • 5 ml cayenne pepper

Method

  1. Get the braai going or preheat the oven to 200 °C.
  2. In a glass bowl, combine the onion, lemon juice, cayenne pepper, salt and pepper and rub onto the fish
