Thai food is all about balancing flavours – achieving the perfect combination of salty, sweet, hot and sour. This salad is the first thing I learnt to make in Thailand and the flavours blew my mind.

Ingredients

  • 2 cloves garlic, roughly chopped
  • 2 fresh red chillies, roughly chopped
  • 30 ml

Method

  1. In a pestle and mortar, pound the garlic cloves until fine.
  2. Add the chillies and press gently to release their heat.
  3. Mix in the sugar, fish sauce and lime juice.
  4. Add the tomatoes and pound lightly – taste for balance, you may need to add more sugar, lime juice or fish sauce according to your taste.
