Everyone who’s ever been to Thailand raves about this dish; I didn’t quite understand the fascination until I tried it myself.

Ingredients

  • 430 g glutinous/sticky rice
  • 1 stalk lemongrass, bruised
  • 2

Method

  1. Soak the rice in cold water overnight or for a minimum of 5 hours. Rinse and drain.
  2. Place the rice, lemongrass and lime leaves into a steamer lined with a damp muslin cloth.
  3. Cover and steam for 20 minutes or until the rice is cooked.
  4. Discard the lemongrass and lime leaves.
  5. Gently heat the salt, coconut milk and sugar in a saucepan
