Brown beef stock is used for beef and game stews and for sauces.

Ingredients

  • 2.5–2.7 kg/5–6 lbs beef bones, preferably with some scraps of meat on, cut into small pieces
  • 2 large

Method

Preheat the oven to 230°C/450°F/regulo 8.

Put the bones into a roasting tin and roast for 30 minutes or until the bones are well brown
