  • 15 g/1 tablesp./ΒΌ cup finely-chopped fresh mint
  • 10 g/2 teasp./2 American teasp. sugar
  • 56 ml/3–4 tablesp./ΒΌ cup boiling water
  • 15 ml/1 tablesp./4 American teasp. white wine vinegar or lemon juice


Put the sugar and freshly-chopped mint into a sauce boat. Add the boiling water and vinegar or lemon juice. Allow to infuse for 5–10 minutes before serving.
