  • 8 ozs (225 g/1 cup) castor sugar
  • 3 fl ozs (80 ml/⅓ cup) cold water
  • 6 tablesp. (generous ⅛ cup) Irish whiskey
  • 2½ fl ozs (60 ml) hot water


Put the castor sugar into a bowl with water; stir over a gentle heat until the sugar dissolves and syrup comes to the boil. Remove the spoon and do not stir. Continue to boil until it turns a nice chestnut-brown colour. Remove from the heat and immediately add 1½ fl ozs (60 ml) of hot water. Allow to dissolve again and then add 6 tablespoons (½ cup) of Irish whiskey. Serve hot or cold.
