Pommes Allumettes are matchstick potatoes. They are particularly delicious cooked in olive oil.

Ingredients

  • 1 lb (450 g) ‘old’ potatoes, e.g. Golden Wonders or Kerrs Pinks
  • olive oil for deep-fat frying

Method

Wash and peel the potatoes. Cut them into tiny, even matchsticks and soak in cold water for 15 minutes. This will remove the excess starch and prevent the potatoes from sticking together. Dry them thoroughly with a tea-towel.
