This Italian vegetable stew reheats perfectly and is a valuable stand-by to have in your fridge.
Peel the garlic and make into a paste. Peel and slice the onion. Heat 2 tablespoons (⅛ cup) of olive oil in a casserole, add the garlic and cook for a few seconds; then add the sliced onion, toss in the oil
