This dish (bò tái chanh) is similar to the Italian dish carpaccio, in which thin slices of beef are served raw or rare on top of a bed of greens. It is perfect to serve as an appetizer or with drinks. This is normally served with prawn crackers and a bowl of Anchovy Dipping Sauce.

Ingredients

  • 2 medium red or yellow onions, thinly sliced
  • 3 tbsp (45 ml) rice vinegar

Method

  1. Soak the onion slices in ice water for 10 minutes. Drain and mix with the vinegar and 2 tablespoons (25 g) of the sugar. Set aside.
  2. Season the beef with the salt, black pepper, and chicken stock powder, and the remaining 1 tablespoon (13 g) sugar. Let sit for 10 minutes.
  3. Place the beef in a large bowl with the lime juice. Let sit for 15 to 20 minutes.
