It is common in Vietnam for home cooks to use both beef and chicken in the same pot of pho; however, many northern Vietnamese inist that phở bò (beef) and phở gà (chicken) are very different. In the beef version, we use more spices, such as star anise, black cardamom, and cinnamon, to counteract the strong beef smell. In the chicken version, we use more bulb and roots, such as shallots, ginger, and coriander, to bring an extra fresh and sweet aroma to the soup. T
