In Vietnam, beef stew (bò kho) is commonly served as a hearty breakfast dish with freshly baked baguettes and a sunny-side-up egg. Some pho joints pour beef stew (sometimes diluted with beef broth) over pho noodles, and voilà, you have a new member of the pho family: phở bò kho. Coconut water is the secret to a naturally sweet broth.
