This dish (phở khô Gia Lai) is a great noodle variation that combines pork and beef. It is unique to Gia Lai, a highland city in central Vietnam. Proudly named for that city, this dish is sometimes also called double-bowl pho (phở 2 tô) because it is served in two bowls, one for the noodles and one for the soup. Unlike the traditional soft and silky noodles for pho, the people of Gia Lai take pride in their regional noodles that are rice-based and thin yet chewy.
