In Vietnam, you will find this dish (phở áp chảo) served at night at Chinese noodle stores. Besides beef, you can also use seafood (such as shrimp and squid), or if you are feeling adventurous, pig organs.

Ingredients

  • 10½ oz (300 g) beef tenderloin, thinly sliced against the grain
  • Salt, to taste
