As customers are constantly seeking out innovative pho dishes, this dish (phở chiên giòn xào bò) is one of the newer creations of pho restaurants in Vietnam. Choy sum (rau cải ngọt) is a leafy green vegetable commonly used in Chinese stir-fries. You can substitute the choy sum with bok choy or spinach.

Ingredients

  • 7 oz (200 g) beef tenderloin, thinly sliced against the grain

Method

  1. In a large bowl, combine the beef with salt, black pepper, 1 tablespoon (15 ml) of the vegetable oil, 1 teaspoon of the minced garlic, 1 teaspoon of the oyster sauce, stock powder (if using), and 1 teaspoon of the tapioca starch. Give it a good mix and let it marinate for 15 minutes.
