Crispy spring rolls—called nem rán in northern Vietnam and chả giò in southern Vietnam—have become one of the most popular Vietnamese dishes the world over. Though one can vary the filling ingredients, the standard spring rolls should include ground meat, woodear mushrooms, and glass noodles for texture.
