You can use this jam (tương ớt) as a dipping sauce or spoon it on top of any dish. The chili jam served with pho is not as sweet as the chili jam served with other noodle dishes in central Vietnam.

Ingredients

  • 10½ oz (300 g) red chili peppers or jalapeños, halved lengthwise

Method

  1. Bring a large saucepan of water to a boil. Add the chili peppers and tomatoes, reduce the heat to low, and cook for 2 to 3 minutes. Remove and transfer to a bowl of ice water to maintain the bright colors. Discard any seeds that might have fallen out in the process.
