This dipping sauce (mắm gừng) is great for serving with steamed squid, snails, beef, fried tilapia, and cooked duck. The ying factor in ginger is believed to balance out the yang factor in these proteins. It can also be used as a dressing for the Beef Shank Salad.

Ingredients

  • 1 thumb-size knob ginger, peeled
  • 2 cloves garlic, peeled

Method

  1. In a mortar and pestle, crush the ginger, garlic, chili peppers, and 1½ tbsp (19 g) of the sugar into a fine paste.
  2. In a small bowl, combine the fish sauce, water, lime juice, and the remaining 1½ tbsp (19 g) sugar and stir well to dissolve. Transfer the crushed ginger paste to the bowl to mingle with the sauce.
