This oil, mỡ hành, which translates to “fatty scallion,” is made with pork fat. Diced fatback is heated until the liquid fat is rendered, and then scallion is added and cooked until wilted. I like to substitute vegetable oil for the pork fat to reduce the cholesterol. Just a hint of salt and sugar makes this oil even tastier.
