If you are unable to make or buy fresh pho noodles, dried noodles work just as well. This cooking method applies to many kinds of dried noodles including bánh phỏ, bủn, hủ tiếu dai, and mì Quảng. Miến are prepared differently so follow the package instructions.

  1. Bring a large saucepan of water to a boil. Add the vinegar and vegetable oil. (The vinegar helps keep the noodles in shape and the oil prevents sticking.)
  2. Add the dried noodles to the saucepan and boil for 5 to 10 minutes, following package instructions. Remove the noodles from the heat when they are soft but still a bit chewy (al dente).
