A beef roll-up is a piece of thinly sliced beef that is rolled up with a vegetable inside and fried. We use raw okra here, but you can use all kinds of blanched vegetables. Ask a butcher to slice the beef paper thin, if you don’t have a Japanese market nearby that sells packaged sukiyaki-cut beef. Or freeze a piece of round steak, defrost it lightly (half frozen), and slice it as thinly as possible.
