Falafel is a popular Middle Eastern dish made with ground chickpeas. It can be eaten by itself or with a salad, or you can stuff it in pita bread with some homemade hummus. Pack these bento components in separate compartments in a bento box and assemble while you eat.

  • 1 cup (200 g) dried chickpeas
  • 1 clove garlic, minced

Method

  1. In a large bowl, combine the chickpeas with water to cover by at least 2 inches (5 cm). Soak overnight or up to 24 hours.
  2. Place the drained chickpeas, garlic, jalapeño, onion, parsley and/or cilantro, coriander, cumin, and salt in a food processor. Pulse until minced and blended but not pureed.
