Hijiki is a kind of seaweed that is full of nutrients, such as fiber, calcium, vitamins, and minerals. It’s been eaten in Japan since ancient times, and it’s one of the most commonly served side dishes in Japanese homes. Hijiki is typically simmered and strongly seasoned, so it makes a good accompaniment to steamed rice. Here, we mix simmered hijiki with rice (gohan), but you can also add simmered hijiki by itself as a side dish in bento.
