When choosing scallops, always try and buy the hand-dived ones rather than the dredged. The latter tend to be gritty and the quality is not as good. Just ask your fishmonger. Scallops and butternut squash both have a natural soft sweetness that combine perfectly together. I’ve added the curry powder to contrast with the sweetness and the pumpkin seeds for the texture.
