Here’s a chefs tip. Whenever you’re cooking onions, always cook them on a gentle heat and keep them covered with a lid. By doing this they will sweat gently and their natural sugars will be released, resulting in a sweeter flavour.

Ingredients

  • 25 g unsalted butter
  • 4 medium onions, finely sliced
  • 6 garlic cloves, sliced

Method

  1. Melt the butter in a large saucepan. Add the onions and garlic, season and cover. Gently sweat for 15 minutes, occasionally stirring to prevent everything from catching on the bottom.
  2. Add the potato, thyme and stock. Simmer for 15 minutes or until the potatoes are soft, then add the crème fraîche. Whizz in a blender until smooth, check the seasoning, adding mor
