At Pearl, I usually serve a soup as an appetizer. But whatever soup it is, we always garnish it with something that enhances the flavour and presentation and adds contrast in taste and texture. In this instance I’ve added onion bhajis. The spices and crispy texture add an exciting contrast to the creamy onion soup.

  1. Make the Onion, Thyme and Garlic Soup.
  2. Place the red onions in a bowl. Add the chilli, ginger, cumin, curry powder, garlic and seasoning and leave for 30 minutes.
  3. Using your hands, mix the tempura flour into the onion mixture. Shape into six balls.
  4. Half fill a saucepan with oil and heat until a tiny piece of the mixture sizzles when dropped
