I came up with this dish while on holiday in Italy, sitting on a terrace having lunch of plump barbecued sardines, a proper tomato salad and crunchy grilled ciabatta. It was fresh, simple and delicious. Ask your fishmonger to prepare the sardines for you. The smell of freshly grilled sardines always reminds me of being on holiday. Perhaps that’s why I like them so much.
