When you’re buying smoked salmon for this recipe, try to get it unsliced. That way you can cut the salmon into cubes, which will give the risotto an interesting texture.

Ingredients

Method

  1. Make the Fragrant Herb Risotto, adding the smoked salmon with the herbs and Parmesan.
  2. Heat the vegetable oil in a small frying pan. Carefully crack in the quail eggs and fry until the white is set.
  3. Serve the risotto in a bowl. Place the quail eggs on top and garnish with the mustard cress.
