Spaghetti bolognaise was one of the first recipes I learnt to make - even before I started to cook professionally. In the restaurant, along with a curry, it’s still one of the favourite dishes for staff dinner.

Ingredients

  • 100 ml olive oil
  • ½ onion, finely chopped
  • 1 garlic clove, crushed

Method

  1. Heat half the olive oil in a large pan and add the onion and garlic. Cover with a lid and cook on a gentle heat for 5 minutes, Add the tomato purée and cook for 2 minutes, then add the tinned tomatoes and oregano and bring to a simmer.
  2. Heat the remaining olive oil in a separate frying pan and fry the mince for 5 minutes or until golden brown. Season and add to
