There’s a little more butter than usual in this recipe but that’s going to give it the wonderful flavour. Trust me it’s worth it.

Ingredients

  • 50 g unsalted butter
  • ½ onion, finely chopped
  • 1 garlic clove, crushed

Method

  1. Preheat the oven to Gas Mark 4/180°C.
  2. Melt the butter in an ovenproof pan with a tight-fitting lid. Add the onion and garlic, cover and cook gently for 5 minutes. Add the rice and coat in the butter. Add the chicken stock, thyme, bay leaf and seasoning
