When I’m in a rush and want a quick dinner, this is what I cook at home. It’ll take you almost as long to read the recipe as it takes to cook the pasta - about 8 minutes.

Ingredients

  • 50 g pine nuts
  • salt
  • 300 g penne

Method

  1. Place the pine nuts in a dry frying pan and gently heat until they are toasted and golden brown. Keep to one side.
  2. Bring a large pot of water to the boil, add salt and cook the pasta for 8-10 minutes. Drain and keep warm.
  3. To make the sauce, heat the olive oil in a pan, add the onion and garlic, cover with a lid and cook on a gentle heat for 5 minutes.
