Fennel and fish is a natural combination. Crushing potatoes is a great alternative to mash, but unlike mash it works better with waxy potatoes.

Ingredients

  • 400 g new potatoes, peeled
  • salt
  • 100 ml extra virgin olive oil

Method

  1. Place the potatoes in a pan, cover with cold water, add salt and simmer until cooked. Drain in a colander, add half the olive oil, sherry vinegar and spring onions and season. Crush with a fork and keep to one side.
