Stuffed fish is a great dinner party dish and it’s pretty simple to do. Instead of mozzarella, try using sun-dried tomatoes. The tomato salsa is delicious by itself as a salad or as a side dish for roast lamb.

Ingredients

  • 2 fennel bulbs
  • 1 buffalo mozzarella
  • 8 x 100 g sea bass fillets

Method

  1. To make the tomato salsa, place all the ingredients for the salsa in a bowl, season and mix well.
  2. Preheat the oven to Gas Mark 4/180°C.
  3. Cut the fennel into 1 cm thick pieces and place on a baking tray. Slice the mozzarella into four pieces. T
