Cod works especially well with meats such as chorizo and bacon. For this recipe to work you need to use pieces of cod from a large fish rather than small fillets. The cabbage pesto is delicious tossed with warm pasta.

Ingredients

  • 1 Creamy Cabbage recipe, but without the Parma ham
  • 4 x 150 g cod pieces
  • salt

Method

  1. Make the Creamy Cabbage, but without the Parma ham.
  2. To make the pesto, put the pine nuts in a dry frying pan and heat gently until toasted and golden brown all over, Set to one side.
  3. Cook the cabbage leaves in boiling salted water for 5 minutes or until soft, remove with a slotted spoon and plunge into iced water. Drain and squeeze out the excess wate
